Edgewise is the on-truck AI assistant for mobile knife sharpeners. Snap a photo of a customer's knives, and in under 60 seconds Edgewise identifies blade types, scores condition, recommends the grit progression, and prints a quote you can hand the chef. Solo operators replace their clipboard, spreadsheet, and gut-feel quoting with one phone screen.
